ABOUT IZVOR

Izvor is the rainbow trout division of Seafood Organic Inc. We farm in the mountains of North Macedonia, on land-based raceways fed by a protected natural spring — flow-through, never recirculated, holding a constant 11 °C all year long.

We control the whole cycle. We breed, we hatch, we harvest — we never buy eggs. That means full traceability from our own broodstock to the table, and consistent quality season after season.

Three signature varieties come out of those lanes: Blondie, Tiger and Speckled.
