Land-Based Raceways On A Protected Mountain Spring

Izvor farms in the mountains of North Macedonia, on land-based raceways fed by a protected natural spring. The water runs through and out — flow-through, never recirculated — and holds a constant 11 °C all year long.

That constant flow is the whole reason the fish are what they are: continuously oxygenated water, no stagnation, no muddy aftertaste, and steady growth through every season rather than a summer peak and a winter stall.

We control the whole cycle. We breed, we hatch, we harvest — we never buy eggs. Every fish is hatched on site from our own broodstock and grown in the lanes you see here, which is what makes full traceability possible, farm to table.
