Premium Rainbow Trout Raised In Crystal Spring Water
Land-based flow-through farming on a protected mountain spring. Three signature varieties — Blondie, Tiger and Speckled — raised to order, harvested to spec and shipped fresh on ice. Below: the spring, the runs and the fish.
The Three Varieties
All three are Oncorhynchus mykiss — rainbow trout — and they share one water, one feed programme and one standard. Each is hatched on site from our own broodstock, grown in flow-through raceways on spring water held at 11 °C all year, and harvested to order. What separates them is colour and marking, not husbandry: the same firm, clean, mild flesh in every box.
Speckled
The Speckled TroutOur own addition to the traditional striped trout: dense dark speckling over a near-black flank, with the rose lateral line still running through. Unique, and stunning plated.
Tiger
Blondie
The Golden TroutRare, exceptional, and among the last raised anywhere in the world. A pale gold body carrying a broad red-orange stripe, and a mild, delicate flesh that reads as a centrepiece before it is even cooked.
The Tiger TroutStriking natural maze markings over olive and gold — different on every single fish, never repeated. Firm, moist flesh, and the most dramatic of the three served whole.
